One night it was pasta with carrots, beans, onions, tomatoes, shrimp, and pine nuts. The next night it was salmon with a side of yup - carrots and beans (at Rich's request I added oyster sauce and red pepper flakes to change it up a bit). I added garlic, onions, brown sugar and soy sauce to the sweet potatoes...mmmm.
Well, I'm finally out of beans. There's still some peppers, some tomatoes, and some - you guessed it - carrots. I think I'll have to break down and hit the market for some creme fresh and salsa so we can make something-enchilada-ish before we take off. I'm pretty sure that Rich would be morally opposed to eating only raw vegetables for the next two days.
