Easy Bruschetta

Lately, when I'm not in the mood for the same old pico de gallo, I've been making a bruschetta instead. We eat it as a cold side dish or as a cold topping to meat, pasta, and veggies. Keep it fresh tasting; keep it cold.



What you need to serve two...
Two to three tomatoes, diced. They don't even have to be just ripe...the lemon juice and salt will work their magic.
Diced onion (red or white, Vidalia would rock it).
Crushed or finely chopped garlic (I like at least 3-4 cloves, but I like garlic)
Capers - a MUST have, its not the same without them.
Fresh lemon juice.
Olive oil.
S & P.
Fresh basil would be great - but that's inconvenient to get here.


Keeping opened bags of beans and rice in my limited cupboard space just hasn't been working out. I can't see what I've got, and the cheap bags break open. So, today's main foray into town was to buy a bean shelf (I did also buy my first batch of European style cloths...but that was just a bonus).

The shelf is nice. It satisfies my OCD tendencies.


And...for everyone that likes tea...I picked this box up in Germany last weekend at the health food store. Its øko (pronounced oooko, short for økologic...i.e. organic), and its fennel & anise flavored (it has one other flavor, but the word is in German and right now I don't feel like taking the time to surf for German translation web pages). I'll just say that I'm drinking a cup right now and its a winner winner chicken dinner.

Now I can listen to Prince's Kiss over, and over, and over, without have to buy the greatest hits package, which I have been reluctant to do for years. That clears a bit more room in my brain for some other really important ponder.
