Hmmm, what's that taste like?

Last week we tried another vegetarian dish – a brown rice and vegetable casserole. It was much tastier than I thought it would be. I think that the brown rice gave it a nice texture. Sautéing and spicing up the vegetables before baking the casserole also probably helped the overall flavor. The flavor of the veggies here might also have something to do with it. The carrots are much sweeter and flavorful than the ones at home, and so are the zucchinis – those are really good.

This is a photo before I added a bit of shredded cheese on top and slid it into the oven.

As always, I am making do with the food we have on hand (can’t just run to the grocery store). This time though, the only change I’d make would be to use a more pungent cheese (I only had mozarella). Rich said that he really liked it. I asked him if he noticed the lack of meat. He said yep, but that he’s ok eating vegetarian here a few nights a week. Especially since beef (any kind, any cut) is 72 Kronner – that’s almost $15 per pound! Must be why liver paste is so popular here.

Mark sent me a link to an intersting Midmorning talk on food, processed food, and nutrition. DK has much less processed foods - very little canned, very few crackers, cookies. Lean cuisine - they have never heard of it and probably wouldn't eat it. I gave Pete a YoGo roller at playgroup, suddenly there was SILENCE, and the mouths of the other kids were all agape. They had never seen anything like it before.

You need to have real player on your computer to be able to listen.
