It’s interesting, there were two of them, and they didn’t talk much to each other. They just wanted to get done and get gone. Oh yeah – and they had a smell that reminded me of my bartending days. It’s hard to delicately ignore it when your 3 year old keeps saying – mom, that guy has a smell. It took me a little while but I finally figured it out – chew. I tipped them each $30. I hope that was enough. Rich said they were doing their job, but it was chilly cold out, and its Christmas.
Before they took my cookbooks away I quick copied a vegetarian appetizer recipe that Rich and I made last year. It’s was hit – even with proclaimed non-mushroom lovers (right Deana?). Its at the bottom of today's post if you want to check it out.
Today is my second official day of unemployment, and I need to do some work that I promised a client. That’s why the boss is letting me keep the work cell phone for a while. I’ll just think of it as a way to slowly cut myself loose…medicated withdrawal …something like that.
…Medicated withdrawal is something I learned from a show that I’m addicted to – Intervention. Yesterday it was an alcoholic wife and mother of three who stashed generic mouthwash all over the house, and slept with it next to her in bed. She agreed to go to treatment at her intervention. I sob during every intervention segment, I totally can’t help myself. Well, except that one episode, where the guy blew – yep blew – hundreds of thousands of $$$ on coke. Come on man, whereare you living, Studio 54 (56???...Whatever!). That’s like soooo three or four decades ago. I shed no tears for you (sorry, really).
Mushroom Leek Turnovers with Blue Cheese
From Beyond the Moon Cookbook by Ginny Callan
Ingredients:
2 TBL canola oil
4 cups finely chopped mushrooms (1 pound)
½ cup diced onion (1 medium onion)
5 large cloves garlic, peeled and minced
2 cups thinly sliced leeks (1 large leek)
¾ cup red bell pepper (1 medium pepper)
1 TSP dried dill, plus extra for garnish
¼ cup fresh bread crumbs
1 pound phyllo dough (thawed)
½ cup (1 stick) margarine or butter, melted
DON'T FORGET - 1 small tub crumbled blue cheese
Heat oven to 375 degrees. Heat oil in skillet. Sauté mushrooms, onion, garlic, leeks, red pepper, and dill until vegetables are tender and the liquid has evaporated (6-8 minutes). Remove pan from heat and stir in salt, cheese, and bread crumbs.
Lay out a sheet of phyllo dough on work surface and brush with melted butter. Fold in thirds lengthwise. Cut the dough in half, forming two rectangles. Put one TBL of filling in bottom left corner of one rectangle. Fold the corner up to form a triangle, and continue to fold until the edges are closed (4 times). Place the finished triangles on two baking sheets. Repeat until you have used all the filling.
Brush triangles with butter and sprinkle with dried dill. Bake 12-15 minutes, until crisp and browned on edges. Serve hot. (Rich and I froze half of the prepared triangles in Ziploc bags, between wax paper, and cooked them a few weeks later and they turned out perfect that way too.)

Moving and Eating
The movers were scheduled to arrive early Monday morning, but didn’t actually show until early afternoon (I guess they came from St. Cloud, and bad weather killed the truck battery). I had pretty much everything but furniture down in the basement, so they spent most of their time down there packing things into boxes.
