Stoup

We have LOTS of ground beef from the Cannon Falls cow. But now that summer is - common everyone, let's face it - over, I won't be making a whole lot of hamburgers anymore. The only soup I usually make with ground meat is chili and I didn't feel like making that. I got this recipe off the web, some food blog where people had posted their own pictures. It looked worth trying.


Basic ingredients are:
2 lbs happy cow ground beef
sauteed onions and celery (lots of celery for me)
carrots
8 oz can tomato sauce
1 can diced tomato
1/3 cup dried split peas
1 cup noodles (I used the little short tube ones)
water (about 6 cups)
1 pack onion soup mix, salt, pepper
garlic, thyme, rosemary, basil (whatever spices you like or have on hand)
top off with Parmesan cheese

The recipe said - 1 cup noodles. I added them and they just disappeared. So, I added more. Because the noodles sucked up all my liquid I ended up with more of a stoup or goulash. Either way, it was tasty and I'll probably make it or a similar version again.
