Something Pretty

A pretty picture since my blog has been blah lately. I look back at the photos from this time of year last year - and I'm just in-a-rut.


This is Easter dinner at my mom's in the US. The ham was the last of the happy pig from the Barrett Farm. There may be sheep on the farm this year - so maybe lamb for Easter next year?? To be continued...

For the sweet potatoes - instead of garlic these had maple syrup and sage (plus bacon and onions). She said they turned out great. And my grandma's deviled eggs are always attractive. Makes eating them even better.

This is how we do sweet potatoes. My mom has been doing it this way since I was a kid, so Wolfgang et al has nothing on her here.

1. Peel and cut up sweet potatoes and cook/boil until just soft, then smash them up with butter and sour cream. Don't boil them too long or they'll get soggy with water.

2. In another pan crisp up some bacon and then break into small pieces. Save for later. Drain most of the bacon fat from the pan, but not all. Saute chopped onion and garlic in this oil. The fat can get very hot so watch your temperature and make sure that the garlic and onions don't burn.

3. Add bacon, garlic, and onions to the smashed potatoes and bake covered in the oven at about 275 F for maybe 45 minutes to have the flavors melt through. Since the bacon can be salty, I let people add their own salt while eating.
